My baby brother turned 20 at the beginning of May. That makes me feel seriously old. 20 whole years. He was born in 2000, the only way I remember how old he is or is going to be! Unfortunately for him his birthday fell in the middle of the present lockdown in the UK. So when he really wanted to be celebrating with friends at uni, he was chilling with his family in the sunshine.
I’ve already shared these photos on my instagram, but I thought I’d give you a little more background to the recipe. Just incase you were bored enough to get this far!!
So this is the beauty that I created.
It’s a three tier Raspberry and Lemon sponge with a lemon buttercream filling and topping. I used this recipe https://www.janespatisserie.com/2020/02/29/lemon-and-raspberry-cake/ Going to let you into a badly kept secret here, Jane’s recipes are bomb-digity. Her brownie recipes, oh-my-days, the best brownies I have ever created have come from her.
I made a few alterations due to ingredient availability issues. I used frozen raspberries in the sponge, I made sure I defrosted them on kitchen paper so they didn’t add as much moisture to the sponge. I also didn’t have enough butter or icing sugar for the icing quantities she recommends so I reduced it by a third, which as you can see by the cake was plenty for us, it was also plenty sweet enough. Best thing about this cake, because of the fruit, it remains super moist and due to the acidity of the lemon any overpowering sweetness is cut through.
Other than that the day was pretty uneventful. Poor Baby Brother. We ate a lot of nice food, so I hope he managed to have a nice day despite the unfortunate situation. The next birthday in our family is mine, so we’ll see what that brings. I would love to have a party, but I think with the current restrictions that is not going to be feasible or even feasible at the end of June but we will see. If not, I could settle for a birthday breakfast feast like this one!
